David Kim has a uniquely "matter of fact" voice in the coffee industry, and while I could say plenty about David and who he is, I'll leave it at this: the focus and attention to detail that David has shown in his competition routines (he competed at World Brewer's Cup 2019) is fully evident in everything he's doing with David Kim Coffee. Oh yeah, and the coffee is delicious.
Keeping things as simple as possible, David sorts his coffee into six different labels, each with its own consistent "personality". Right now, four of those labels are available in one of two distinct roast styles, White or Black. White is meant to be for those who prefer slightly brighter and balanced coffee. Black is for anyone who loves a smoother, heavy cup. I think you can guess which roast makes for a more enjoyable espresso.
DUVIXE has purple fruit characteristics with notes of black tea and dried fruits. This Kenyan is one of David's favourite origins – having classical Kenya flavours like black currant, raisin, blackberry, and candied ginger.
KIYALO is the first of DK's Selection. Citrus fruit dominates with notes of orchard fruits and floral teas. A red honey processed Gesha from Johel and Mathias Monge of Costa Rica.
The coffees in DK’s Selection are special and all offer a unique tasting experience. David has high standards for what makes this selection, with taste being the top priority. Because of this, DK’s Selection coffees will only available on a rotational basis. Savour them while they’re here.
PURE coffees offer a soothing and delicate experience; a cup of coffee you really want snuggle in with. The goal with PURE is to the let the flavours of the beans shine through, so in these roasts you’ll primarily taste the characteristics of bean variety and terroir. PURE coffees will usually be washed processed, with the occasional honey when it fits the profile.
WILD is all about fruity, heavy bodied coffees. This coffee showcases the amazing effects that processing can have on a bean. Whether it’s a natural process or a vibrant honey, WILD coffees are loaded with fun personality. The current WILD offering is a natural processed F1-Centroamericano from Camilo Merizalde of Costa Rica.
