Firebat - Los Pocitos: Washed, El Salvador (340g)
This medium roast coffee from Los Pocitos offers a solid creamy body with cacao and baked brown sugar undertones. It's perfect for an espresso shot or a pour-over. This Pacamara undergoes a washed process. After harvest, the coffee is washed to remove the cherry and fruit mucilage, then dried on raised beds at Ignacio's farm for 7 to 10 days. Ignacio Gutierrez, known as Nacho, transitioned to coffee production in 2005, winning several Cup of Excellence awards and reinvesting in his farms (Los Pocitos, La Roxanita, and San Nicolas). These farms, situated in Chalatenango, boast elevations of 1,600 to 1,700 meters and feature Pacas, Pacamara, Gesha, and SL28 varieties. Nacho and his family group master all three drying processes: washed, honey, and natural.
