Ghost Roaster - Carlos Cadena: Anaerobic Washed, Mexico (340g)

It is the second year of Ghost Roaster working with the folks from La Nacional Coffee Imports to bring in coffee from producer Carlos Cadena of Finca Huehuetepan. Last year, Ghost Roaster got the opportunity to roast both a washed Typica from Carlos, as well as the Cup of Excellence award winning coffee. The entirety of this lot was bought by Ghost Roaster, a first for this smaller roaster! This Mundo Maya variety coffee is a beautiful balance of clean sweetness and depth of character with being both given time in an anaerobic atmosphere but being a washed coffee. Macadamia nut overlays a raspberry jam sweetness and slight tart character, followed by the depth of raisin and brown sugar to round out this complex yet comforting cup.
