The Fatima Micromill in Cartago (Tres Milagros and Tobosi) produces Caturra and Catuai lots using meticulous post-harvest processing overseen by agronomy engineer, Nelsyn Hernandez. Anaerobic fermentation, with 72 hours of fermentation time including half in full sun, develops unique flavours in this coffee. This green* coffee was sourced by Apex.
