    Single Origin - Ricardo Zelaya, Guatemala Cup of Excellence Finalist

     

    A beautiful coffee grown Ricardo Zelaya and his team grown, at an elevation of 1600-1880 masl, San Agustin calls the eastern slopes of Antigua home. Ricardo took over San Agustin in 2005, with a long term rent agreement for the farm. The plantation, 4 hectares in size was in bad shape when Ricardo took over, and was going to take a complete overhaul in order to be productive again. Ricardo undertook replanting the 4 hectares, renovating the farm, adding an other 21 new hectares - succeeding in breathing new life into the farm.

     

    This coffee was a special picking of the Bourbon variety from the San Agustin farm, and was picked March 19th, 2019 and it ended its drying period April 9th, 2019. It was de-pulped and fermented in the wet mill, then transported through clean water canals to the greenhouses where they were dried for three weeks. After the coffee reached its ideal humidity, the coffee went through a resting period before being exported to the dry mill.

     

    This coffee was entered into the COE competition, where it passed the first two rounds. Due to new regulations of COE, San Agustin was not able to have more than two samples competing, leaving Ricardo and his team to choose a sample to take out of the competition. After a tough deliberation, this coffee was pulled from the COE competition, and this is how it became available for us to buy.

     

    We find this coffee to be a really fine example of Guatemalan coffee; classic, balanced and clean, but with lots of complexity.
