This cooperative has organic certification and is in the process of obtaining fair trade certification. It is a well-organized cooperative that pays its 101 farmer members a fair price and helps them export their grain.
We like this Peruvian terroir. They are small producers with a growing potential. They are new to the world of third wave coffee and surprise us year after year.
It is a well developed roasting, high in temperature to bring out the dark chocolate and the almond. We want to have crema in espresso, for a rich and generous latte.
The ideal with this coffee is to make a big comforting latte when it rains.
