A natural mutation of the bourbon varietal, caturra is extremely lively, juicy and sweet.
You can enjoy the exceptional processing when enjoying an exquisite acidity, and ripe fruits like plums and figs. Complex, it’ll still feel familiar.
The long underwater fermentation, followed by 16 hours of pulp fermentation, long drying and longer then usual resting period before exports, we can appreciate Jose’s genius with a varietal that is considered good, but not world class.
