Aquiares Estate is a carbon neutral coffee farm with impressive social and environmental practices. Our favourite is their Varietal Garden, where they've tested over 30 hybrid varieties for their cup quality, productivity and pest resistance. Centroamericano is a hybrid of Ethiopian and Latin varieties, and we brought in three different processes of this variety to highlight the effect of processing on flavour. This honey process is syrupy and sweet, with a peachy acidity and notes of melon and citrus.
