ABOUT THE GEDEB SHABELLA, FILTER
Getachew is a very experienced producer who is known for his skills in efficient and high quality production management. He runs the Gedeb washing station where around 600 coffee growers deliver ripe cherries, many of which come from small family plots which include both improved varieties as well as traditional landraces.
Once the cherries are delivered to the washing station, the laborious manual selection of ripe cherries begins. They are then dried in fine layers on raised beds for 15 to 20 days and regularly stirred to ensure consistent fermentation. This process requires intense labor and immaculate attention to detail which ensures well maintained and stable flavors. The rich soil around this area, combined with the processing method, contribute to a refined, clean and complex final cup.
This beautiful naturally processed coffee is bursting with sweet and fruity flavors without any excessive fermented notes. Elegant aromas of jasmine and rose are followed by notes of wild strawberry, nectarine and cocoa, all in a creamy and coating body.
