ABOUT THE PARAÍSO ESPRESSO
This coffee comes to us from the Paraíso farm, one of the 6 farms of the Brazilian family institution Veloso Coffee. Veloso has been producing specialty coffees in the Cerrado region of Minas Gerais since 1975, embodying an expertise passed down from generation to generation and focusing on sustainable innovation. Strategic GPS mapping of agricultural plots allows them to manage a harvest schedule that is precisely aligned with optimal cherry ripening as well as optimal water management. They are also very active in their community, supporting orchards in local schools, an ederly care home as well as a program for children in need.
The Paraíso farm is located in the municipality of Carmo do Paranaíba and is one of the oldest in the region to produce coffee. The coffee trees are planted in rows to achieve an uniform sun exposure throughout the day. The farm is 100% irrigated by a drip system with collection of excess water in reservoirs. It is administered individually and has its own harvesting, pulping and drying equipment. For this particular lot, the cherries were harvested mechanically when they were practically dry on the trees. The coffee is then dried in the sun for 10 days and rested in cherries for 30 days before hulling, sorting and packaging.
This vibrant and sweet espresso features flavors of pink grapefruit, honey and milk chocolate. Its syrupy mouthfeel and balanced acidity makes it an excellent espresso, but it can also be mixed with a good amount of milk for an unparalleled cappuccino!
