The Scentone aroma kit is developed through flavour analysis and lab analysis on popular coffee varieties in the specialty coffee industry. The panel for the flavour analysis is composed of professional tasting experts from 30 countries to assess and verify the coffee flavour. In addition to the flavour analysis, a chemical analysis is also conducted on aromas in coffee using the GC-O (Gas Chromatography-Olfactometry) method to deliver an objective and consistent quality of samples.
The variants and strength of the aromas in coffee are listed based on flavour analysis. This flavour data set is combined with the chemical library made with the GC-O chemical compound analysis. The Standard Coffee Map is created with 100 carefully selected aroma samples through flavour and chemical analysis. Each sample’s dilution ratio is adjusted by considering the recognition threshold to provide a similar intensity level between each sample.
