This anaerobic nano-lot is explosively flavourful and articulate showcasing variety as much as process. Volcan Azul is diligent about carerfully controlling the anaerobic process to maintain the coffee's integrity. Nothing is added to the tanks and only yeast from the farm is used to ferment. Time, temperature, and PH are carefully monitored at every stage. Producing off of the slopes of the Poás volcano, the Castro-Kahle family continue a tradition of producting world class quality coffee going back to the 19th century. Having followed coffee from Volcán Azul over the last few years, we decided to visit producer Alejo Castro on his family farm back in February and were astounded by the range and consistent quality across varieties and processes. This family run operation has earned an esteemed place on the world stage, setting benchmarks for assiduous quality management, innovation, exploration, and environmental stewardship.
