In November, the Subtext team had the opportunity to visit Ricaurte and witness his devotion to his farm. This year, Ricaurte experimented by adding yeasts, provided by importing partner Quest, to the fermentation process. The outcome is a delicious cup profile with notes of gummy candy, blackberries, and ruby grapefruit.
