Tony Medina, a fourth-generation coffee farmer from Chimaltenango, Guatemala, cultivates 64 manzanas of Caturra, Bourbon, Gesha, and Pacamara varieties, while preserving the native forest on his property. He uses traditional washed processing with a demucilager to reduce water usage and composts coffee pulp as organic fertilizer. In the cup, you will find notes of apple, dried dates, and black cherry.
