Since Jhonny Jr. has taken over processing at his family’s Corazón de Jesus micro-mill, he’s been trying some new stuff. He’s only 19 years old, but Jhonny’s learned a lot from his dad and he’s eager to try new things in the pursuit of delicious coffee. This was a standout from the 2019 harvest, a naturally processed Bourbon variety that is filled with deep berry notes and brown sugar sweetness. We’ve stored the green (unroasted) coffee in a vacuum-sealed mylar bag in our freezer for over a year now, and we’re happy to see that it’s held up beautifully in that time. We’ve been freezing all of our reserve offerings to ensure they retain all of their characteristics and we’re happy to be able to taste coffees from months ago that are still as vibrant and exciting as they were when they arrived.
