Since winning second place in the Yara Championship in 2015, Beto has dedicated himself to refining high-precision processing techniques. This lot utilizes a multi-stage approach: cherries are first fermented whole in hermetically sealed bags for 20 hours, then depulped and fermented for another 48 hours in a low-oxygen environment. The process is finalized with a thermal shock hot water wash to lock in aromatics and ensure consistency. The result is a highly aromatic cup with a silky texture, offering notes of melon and honey complemented by complex baking spices and a sugar-cereal sweetness.
