Carlos, a former board member of the Guacharos group, has transformed his drying beds with Arduino-controlled sensors to monitor humidity and temperature, ensuring an optimal drying environment. This specific lot underwent a multi-stage fermentation process, starting with 24 hours in whole cherry before de-pulping and an additional 60 hours in sealed barrels. The result is a crisp and clean profile that balances sweet and savory guava notes with deep panela sweetness and a refined black tea finish.
