Tasting Notes: Sprite, Ginger, Lemongrass, Lime, Black Tea

This Castillo coffee from Diego Bermudez’s Finca El Paraiso in Cauca, Colombia, is processed using a unique Double Anaerobic Thermal Shock method. This highly innovative technique creates a complex and lively cup with soda-like notes of Sprite, spicy ginger, and zesty lemongrass, all balanced by a tea-like finish

Lemongrass and ginger

Possibly my #1 coffee (for non-washed)

Lemongrass and ginger notes are insane

Underwhelming

Underwhelming. Huge fan of this producer (who isn't?) but this doesn't live up to the hype. Tried pushing it to 1:18 given the lighter roast profile, with slightly better results than a shorter ratio, but still a very muted profile overall. Aroma and taste both fell short given the price.
