The coffee undergoes a unique processing method called Hydro Honey, which involves a hybrid process combining aspects of natural and honey processing, including a 48-hour fermentation period followed by drying on shaded beds for approximately 25 days. Danche, located in the Gedeo zone of the Gedeb district, boasts ideal conditions for coffee cultivation with its dense semi-forest vegetation and shade-grown coffee trees. SNAP Specialty Coffee established a new wet mill in Danche in 2019, utilizing ceramic fermentation tanks to enhance clarity and expedite fermentation, achieving their goal of sourcing exclusively red cherries from local farmers and elevating the quality of their coffee.
