COF-AM-0003The Fed-batch Washed Process utilized for this coffee involves a mixed batch from three different days of picking, followed by in-husk dry resting for up to 24 hours and up to 60 hours of dry fermentation in tanks, concluding with sun drying on an elevated patio. Lizardo, a second-generation coffee producer, inherited his passion for coffee from his father, who emphasized organic farming and beekeeping. His farm, El Recuerdo, cultivates Rosado, Tabi, Colombia, and Castillo varieties, each meticulously separated and cupped individually. Lizardo, alongside his nephew Jensen, who serves as the Director of Quality, produces an exceptional cup recognized by their involvement with LaREB, a foundation of farmers supported directly through their friend Herbert. This coffee of is a delicate and presents a complex sweetness with citric notes of Orangina, sticky nougat flavour, with spring blossom undertones, depending on the brewing recipe. The AMOC jars are made from lightweight, fully recyclable PET and are reusable.
