Café Granja La Esperanza is made up of five farms known for producing award-winning coffees. Potosi, one of the farms, grows several varieties of coffee, including the hybrid Colombia varietal. The cherries are fermented for 15 hours at a controlled temperature before being moved to a dehumidifier for another 72 hours until fully dried. They are then dehulled and bagged for export. The Colombia varietal provides disease resistance and improved flavour profiles, but it can be unstable and has been replaced by Castillo in recent years.

Very delicious cup.

I brewed my first cup with Origami 15:240 3 pours, and I enjoyed it quite a lot. Very sweet indeed.

Another great one from the Manhattan crew. This coffee punches well above its weight class in terms of price, I have had many coffees which cost 50% more than this that cannot compete.
