This method begins with a 6-hour enzymatic treatment of the whole cherries followed by submerged fermentation, which locks in aromatic complexity and vibrant clarity. The cherries are then pulped, washed, and dried in a dark room to preserve the desired elegant flavor profile, resulting in a cup with notes of orange blossom, pu'er tea, juicy guava, and preserved plum
