Tasting Notes: Apricot, Vanilla, Violets

Laurina is a rare, naturally low-caffeine variety that is celebrated for its elegance and restraint. This specific lot is produced by Edinson Argote at Quebraditas Coffee Farm in Huila, Colombia. Edinson, a producer known for his precision and deep understanding of quality processing, utilizes a "Washed Thermal Shock" method to define the coffee's structure. The cherries undergo a 36-hour oxidation, a 50°C hot water wash to create a thermal shock, and a 72-hour yeast fermentation, before a final 5°C cold wash to seal the flavors. The resulting cup is refined and floral, featuring soft notes of apricot and vanilla with an elegant violet aroma.
