Diego's innovative approach to coffee processing sets his Colombian coffee apart. Using precise bio reactors, he meticulously monitors variables like time, temperature, pH, sugar content, and microbial load, resulting in a unique flavor profile. Featured here is Diego's Castillo, processed with Thermal Shock, offering notes of cinnamon, pistachio, and coconut. The journey begins with careful cherry harvesting, followed by ozone disinfection and a 72-hour anaerobic fermentation. After pulping and demucilagination, specific microorganisms are cultivated to enhance aromas and flavors during fermentation. A 36-hour fermentation period and a thermal shock process further refine the coffee, which is dried in a dehumidifier to preserve its delicate notes and prevent over-oxidation, promising a truly exceptional coffee experience.

This specialty coffee delivers "dessert-like" flavors with prominent cardamom, cinnamon, and pistachio notes. Customers said it's "smooth, creamy & spiced" and "tastes like buttercream." While praised as "forgiving" and excellent with milk, some found it "tricky to dial in" for pour-over and pricey. A few felt flavors were overpowering or inconsistent.

A bit tricky to dial in for a pour over, but has a nice taste. With a name like "Buttercream" I anticipated a heavier body, but it's actually described on the bag as a medium-bodied coffee with a slight acidity.

I get the hype.

This is quite forgiving and delicious out of the bag, but as I got better at brewing it, it became increasingly enjoyable to make and drink. Lots of cardamom and cinnamon.

Like other folks, I found this to be similar to the Milky Cake by Dak. My partner prefers Milky Cake, but I liked this one a lot. It had a sweet/cinnamon note, but there was also a depth to it. Definitely going to buy again!

Not my style

Lots of good reviews on this one, but just not for me. I found the flavour to be a bit lacking and did not really live up to the high ratings that most people gave it. It is a different coffee but not unique enough to justify the premium over something else. It is worth a try if you want something that is different than the average coffee. The cups are drinkable but not something I would recommend to many.
