Following a strategic shift toward extended fermentation times—moving beyond the traditional 12-hour window—the cooperative has unlocked greater structural sweetness and complexity in their classic washed coffees. This lot is decaffeinated using the Ethyl Acetate (EA) method, which utilizes a natural solvent derived from sugarcane to gently remove caffeine while preserving the coffee's cellular structure. The result is a lush and balanced espresso, featuring bright stone fruit notes of apricot layered over a rich base of chocolate and toasted praline.
