COF-TW-0015Produced by Negussie Tadesse at his Tatmara farm in the Dakiti region of Kaffa, this washed lot is a meticulous expression of the 74112 cultivar. A selection by the Jimma Agricultural Research Center (JARC) for its resistance to coffee berry disease, this variety originates from the Metu-Bishari forest and is prized for its high yield and refined cup quality. After being hand-picked and sorted, the cherries are de-pulped and wet-fermented for 24 hours before being graded in washing channels. The parchment is then dried on elevated tables for up to 14 days under shade nets, a process that preserves the delicate aromatic oils. The result is a quintessential high-elevation Ethiopian profile, defined by bright citrus acidity, elegant floral notes, and a lush stone fruit sweetness.
