Using a classic low-intervention washed process, the cherries are rested for 24–40 hours before pulping and fermenting in bags for another 24 hours. The result is a smooth and elegant cup with prominent sweetness and acidity, featuring notes of juicy nectarine, vanilla, and subtle berry undertones
