Grown on volcanic soil at a staggering 2,100m, the cherries undergo a unique 48-hour fermentation with beer yeast followed by a 24-hour mucilage fermentation with frequent stirring. A specialized two-stage drying process further refines the lot, resulting in an exceptionally sweet and aromatic cup with notes of orange blossom, honeydew melon, and a refreshing lemongrass finish
