Utilizing Emmanuel Rusatira’s standard anaerobic natural protocol, cherries are fermented in barrels for 72 hours before being dried for 35-40 days. The result is a clean, complex, and memorable cup with notes of blackberry, plum, and vanilla, which challenges traditional notions of traceability while celebrating the inherent quality of Rwandan coffee
