September - Hachi NOA
COF-SP-0200Hachi Noa is a groundbreaking collaboration between two industry titans: processing innovator Diego Bermudez of Finca El Paraiso and Allan Hartmann of the legendary Hartmann Estate in Panama. This Geisha lot is grown at extreme altitudes of up to 2,200 meters in the Chiriquí region before undergoing Diego's proprietary "Inverted Processing." This complex technique, which involves precise microbial control and thermal shock, reimagines the classic Panamanian Geisha profile. The result is a stunningly clear and vibrant cup, featuring intense jasmine aromatics, a bright sparkling lime acidity, and a refined, powdery sweetness reminiscent of icing sugar.
