Produced by Antonio "Tony" Medina at his farm, Finca La Colina, this lot represents the fulfillment of a lifelong dream. After years of working on various coffee estates to gain experience, Tony planted his first trees in 1991, eventually transforming his land from basic grain production to specialty coffee. This "Late Harvest" release from Subtext highlights the increased sweetness found in the final picks of the season. Composed of Caturra and Bourbon varieties grown at 1,700 meters, the coffee is traditionally washed and slow-dried, resulting in a classic Guatemalan profile elevated by deep fruit notes of fig and red berry, balanced by a smooth milk chocolate finish.
