COF-BN-0116Santa Clara is a balanced and approachable coffee from the fertile Antigua valley. Produced by Ricardo Zelaya, a fourth-generation farmer, this lot consists of Caturra and Bourbon varieties grown on the volcanic slopes of Volcán de Agua. The traditional washed process, followed by a slow 21-day drying period on raised beds in a solar dryer, results in a smooth, syrupy texture.
