COF-DA-0125A very elegant sidra washed carbonic maceration from Sebastian Ramirez. This coffee is full of brightness with lots for anise, rosewater, peach and white floral notes. A truly unique coffee and representative of the meticulous work of Finca El Placer. This coffee undergoes carbonic maceration followed by washing, a controlled fermentation process inside sealed tanks with added CO2. After 24 hours in the tank, the cherries are pulped, washed, and the parchment coffee is dried in polytunnels called "heldas." These structures regulate temperature and humidity, protecting the coffee during slow, consistent drying, ensuring quality and longevity.
