COF-94-0027Bryan, a coffee producer from San Adolfo in Huila, Colombia, learned the craft from his father starting at age 13. This year, he launched a project with over 60 coffee growers, including his family, to harvest and sell coffee cherries at better prices, collaborating with the Forest and Ancla processing plant for unique fruity fermentation. Their specialty coffee features intense strawberry notes with a creamy white chocolate body, offering a dessert-like experience. The coffee undergoes an intricate curing process involving pre-fermentation, aerobic and anaerobic phases, and a final flavor soak, resulting in a complex and rich taste.
