This second lot of Geisha variety from Diego and his team at Finca El Paraiso highlights their innovative anti-maceration process, where cherries are ozone-disinfected, vacuum-fermented, and dried using zeolite. The result is a beautifully complex cup, with vibrant notes of violets, cherry, and prune. This coffee is a testament to the El Paraiso team's dedication to pushing the boundaries of specialty coffee processing.
