January 31st + February 1st – Pony Coffee, a travelling coffee service, will be hosting their inaugural pop-up café next weekend at Paradigm Spark where they’ll be brewing a bespoke menu of espresso-based drinks on the Fellow Espresso Series 1 Machine.

The Duo Behind the Bar

The team behind Pony Coffee is Karine Ng and Daisy Swain, who together have a combined 20 years of experience in the specialty coffee industry.

For Karine, that time was mostly spent competing, judging, and coaching in coffee competitions. Meanwhile, Daisy earned her barista qualifications at Phil & Sebastian, crafting drinks at the Mission café before moving on to Eight Ounce Coffee where she’d teach latte art classes and work in the showroom.

Paradigm Spark Hosts Pony Coffee’s First Pop-Up Event

Having opened their doors late last year, Paradigm Spark is one of the newest additions to Calgary’s sprawling, eclectic collection of independent coffee shops.

If you have not already been, Paradigm Spark coffee is highly recommended for a spacious layout and “Experience Bar” – an interactive take on the traditional espresso bar where Paradigm’s highly skilled baristas brew their selection of specialty coffees right in front of you.

To support their coffee community, Paradigm Spark also hosts unique events, classes, and pop-ups throughout the year.

This weekend, don’t miss your chance to visit Karine and Daisy as they spend the afternoon at Paradigm Spark, offering a pop-up menu featuring two creative espresso drinks made on the highly anticipated Fellow Espresso Series 1 Machine.

• Black Sesame Latte: nutty, lightly sweet, and steamed with almond-soy mylk, it’s the perfect comfort drink for a frigid late-January afternoon.
• Banana Medicine Latte: delicious and nostalgic, this latte is served cold with a hint of banana flavour to gently remind you of “that medicine we all secretly loved as kids”.

Finally, any tips collected by Pony Coffee during this weekend will be donated to the Women's Centre of Calgary.
