The processing involves overripe cherry picking, 24 hours of in-husk resting, followed by 36 hours of anoxic dry mass fermentation, and is then dried in a marquesina for 20 days. This meticulous process results in a cup profile featuring vibrant notes of red apple and caramel, with a rich and sweet finish, exemplifying the quality and dedication of the producer
