After being picked at peak ripeness, the cherries were transported to Shady and Elias Bayter's farm in Tolima, where they underwent three rounds of fermentation, including a five-day anaerobic fermentation with dehydrated, ground cherries, followed by drying in mechanical dryers over ten days. The result is a vibrant and fun coffee reminiscent of Cherry Coke, with notes of sweet cinnamon, vanilla, and bing cherries, offering a dynamic and nostalgic sipping experience
