This expressive Caturra and Catuai coffee from mechanical-engineer-turned-producer Esteban Zamora in San Marcos, Tarrazú, Costa Rica, is his best iteration of the cinnamon anaerobic process to date. The pulped coffee is combined with cinnamon powder in GrainPro bags and left to ferment anaerobically for six days, resulting in a remarkably sweet cup that reminds us of cinnamon rolls and baked apples, with a smooth, creamy texture like sweet horchata

Cinnamon Bomb

Great roast for autumnal flavour fans. The Cinnamon comes through strong but also notes of baked apple and black tea.
