Tasting Notes: Pavlova, Marshmallows, Vanilla, Floral

This is a blend of two coffees from Colombia: a washed Geisha from Wilder Lazo, Segundo Lazo, Heiner Lasso at Finca La Dinastía and a washed Java from Wilton Benitez at Granja Paraíso 92. The Geisha undergoes a lemongrass fermentation, while the Java is processed with thermal shock. This blend offers a bold and complex cup with a smooth, rich sweetness.

Strawberry punch

Light, smooth, medium acid. Notes of strawberry punch. Not getting any marshmallow cupcake, lol, and I'm kind of glad. A good smooth light red berry brew. Good job.

How'd they do that?

I didn't nail it every time, but when I got everything right, there was definitely marshmallows in my coffee. I had better results with V60 with this one, I will try it again if I see it. It has a very smooth mouth feel, and sweetness, as you would expect from a marshmallow.
