Produced at Finca Milan in Risaralda, Colombia, this Castillo coffee undergoes advanced mixed fermentation, incorporating sourdough starters with yeast, bacteria, and microbes from pineapple and banana during its 170-hour fermentation process. After sun-drying, the coffee is meticulously cleaned and packed to preserve its vibrant flavors. The resulting cup is reminiscent of banana milkshake with notes of toffee, caramel, and pineapple, making it a delightful choice, especially when paired with milk. For this coffee, the filter roast performs fantastic for espresso as well and therefore DAK uses the same roast for both options. A label "omniroast" will appear on your box for this reason.

This is a milk coffee

Espresso alone it’s not the same but add milk and it’s banana for sure!

Another great one from DAK

I must say… coffee culturing is a little bit cheating, but when not overdone and done properly I think it compliments the beans and the farmer rather than insulting them, and Banana Split definitely does the former. I’ve been using my Hario switch when brewing this, ratio is 16.1, bloom for 40 seconds then immerse until 2:30, and the result is ugh so good. It is light-medium bodied and full of chocolate-dipped banana flavors. Lots of yum! Definitely will buy this again.

BANANA!!!

Wasn't sure if I would like a Banana tasting note but the wifey wanted to try. And boy, am I glad we did! This is brought out a very tasty cup!

I love this! Reminds me of the release from Black&White coffee roasters in late 2023 called "Bananas Foster". This one definitely has a nice banana flavor, more tame, not too funky. I might need a second bag.

yes!

Imagine milky cake but with out the spices. That's kinda what I'm getting. I like it. This is a weird comparison but there used to be theae cheap cigarillos that where banana flavored, and it kinda reminds me of that, but ina good way, not like in a nasty smoking way.
