COF-DA-0266This melon co-fermented coffee from Finca Milan is more subtle and refined than the previous “Melondo,” yet just as delicious. With notes of watermelon, kiwi, and cantaloupe, it’s fermented in a bioreactor with watermelon fruit must, starter cultures, and leachates, all while carefully monitoring temperature, pH, and Brix levels. After fermentation and mucilage removal, the beans are sun-dried for 20 days, followed by a 5-day mechanical drying period to fine-tune moisture levels
