Tasting Notes: Cardamom, Pistachio, Vanilla Cake, Honey

This coffee is a cake in a cup. This is a truly special and unique coffee - we’ve never had anything similar before. The Castillo cherries have undergone an anaerobic fermentation for 48 hours at 20 Celsius. The coffee is then thermic shock washed. The beans then undergo controlled drying for 34 hours at 35°C and a relative humidity of 25% until reaching a grain moisture of 10%-11%.

Super Unique!

This is a great coffee! I wanted to try it to see what all the fuss was about. It totally lives up to the hype. To me, it tastes like spiced and roasted pistachios. But, pistachios the actual nut and not the artificial pudding flavor. I have tried a couple other versions of this bean and this one is completely different. I loved it so much I bought a Kg bag!

I have tried September Buttercream in the past so was very interested to try this one! Not sure which one I like more but both are absolutely delicious!

An Exceptionally Unique Coffee

I understand that coffee is entirely subjective in taste, but I’d say that this one is objectively quite unique. The aroma when brewing is unlike anything I’ve ever smelled in coffee, and the taste is way different when compared to a standard bean this light - it’s got the sweetness of a light roast, but very low acidity. While it’s not something you’d drink everyday for the rest of your life, it’s such a unique experience that’s absolutely worth a try!

Man this stuff is so unique. Easily my favorite from Dak so far and now I've ordered like 5 more different kinds from them. Milky Cake is still my favorite.

Best so far

In both a V60 and a Chemex this morning, this is probably as pleasant a cup as I can recall. Plenty of sweetness with spice notes. I've heard the September Buttercream are the same beans, so I'm going to try and track down a bag of those shortly.

Ok I like it

It’s definitely very good. Even though I’m a bit suspicious of these tasting notes. As most are saying, cardamom is really at the forefront. So much so that I am wondering if this is a co-ferment flavour infusion rather than a “note”. It’s the same problem I have with Hatch’s Lychee (I like Lychee much less than this). That being said, this coffee deserves the hype because it’s quite good, whether it’s a co-ferment or not.

Very unique.

Really enjoy this coffee. On the aeropress I found the card of a note very strong cardamom note on the front end with lovely vanilla finish. Cardamom was a tad overwhelming, but switching to V60 I found a better balance of flavors and have been enjoying this bag a lot! A must try in my opinion.
