This coffee is a cake in a cup. This is a truly special and unique coffee - we’ve never had anything similar before. The Castillo cherries have undergone an anaerobic fermentation for 48 hours at 20 Celsius. The coffee is then thermic shock washed. The beans then undergo controlled drying for 34 hours at 35°C and a relative humidity of 25% until reaching a grain moisture of 10%-11%.

Unique coffee

Very different - in a good way. Herbal, with strong notes of cardamom and maybe vanilla. I really like it as an evening coffee, blended with 2/3 decaf (I use Paraiso 92 Caturra decaf) and only 1/3 DAK. It's so [potent that it's definitely enough. Using an aeropress, but i think pour over and even espresso would be equally good

I first bought this coffee about a year ago and have tried it a couple times since at different cafes and stores. Each time I'm surprised how much I enjoy it and how clear the notes described are. It really is a unique coffee experience and is almost tastes like an arabic coffee. Highly recommend for anyone wanting something interesting without going too wild.
