After harvesting, the coffee was pulped and left oxidizing with mucilage for 12 hours, followed by an 8-hour submerged fermentation in 28-degree water. The process was completed with a thermal shock wash using 65-70°C water, then dried over 18-24 days to 11% humidity. The result is a bright and complex cup with notes of florals, lime keffir, and white chocolate, showcasing Jhoan’s innovative approach to processing
