H10, a hybrid bred for high yield, rust resistance, and cup quality, undergoes red honey processing, where most of the fruit is removed but some mucilage is left intact for fermentation. The result is a sugary and sweet cup with notes of mandarin, gingerbread, and panela sugar, reflecting the rich history and innovative farming practices of the Castro family
