Still dialing in

Got this today, three weeks rested. I’m sipping my third brew now. First two using the Switch with a hybrid method, third brew on the Aeropress. I am getting a better cup using the Aeropress with this coffee for some reason. That kefir note listed is really amplified using the switch, lending to a maxed out acidity (almost sour) that I find very unpleasant. Mind you, I’m still dialling this coffee in so this could be brewing error on my part. Seems like this one might lend itself better to lower brewing temps. I used a 93° temp water for the aeropress, but I think it could benefit from maybe going even lower in search of those as-of-yet elusive fruitier notes. I am getting the cocoa note in the forefront of this coffee, even though it’s the last listed tasting note. I am determined to find the pears!!!
