Tasting Notes: Cola Nut, Lively Acidity

This double-fermented Bourbon and Caturra lot from Punta del Cerro, grown by Aurelio Villatoro in Huehuetenango, delivers a balanced and full-bodied cup with vibrant acidity. The cherries undergo a 36-hour sealed fermentation before depulping, followed by a second 36-hour fermentation, enhancing its complexity and refined sweetness. The beans are then carefully dried on raised beds for up to 18 days, ensuring a clean and structured flavor profile.
