Smallholders, primarily from the Pa-O ethnic group, harvest ripe cherries early in the morning, delivering them to village depots for meticulous sorting and grading. Only cherries with a 95% or higher ripeness level are dried on raised beds before further processing at the Amayar Women’s Processing Facility. This vibrant coffee highlights the region’s transition from poppy cultivation to specialty coffee, supported by Sawbwa Coffee and Pink Headed Duck, delivering a cup with notes of strawberry jam, pear, and caramel.
