Cherries are initially fermented anaerobically, and the liquid must is collected and combined with misfit fruit to ferment separately. The cherries are later re-submerged in this fruit-must mixture for a final 96-hour anaerobic fermentation, resulting in a complex and intensely fruity cup with notes of tropical fruit, stewed apple, and strawberry candy
